- Begin by cooking the broccoli. Whether using fresh or frozen broccoli, make sure to fully cook the broccoli until bright green. Drain well and allow to cool slightly. Note: the broccoli need not be warm at all for this recipe to work, so feel free to use pre-cooked broccoli or to prepare it earlier in the day.
- Next, add all of the ingredients to the bowl of a food processor. Pulse until well combined.
- Scoop up in 1.5-2 Tablespoon scoops. Use your hands to gently roll into balls. If the mixture sticks to your hands, try wetting them a bit before rolling into the balls.
- Spray the basket of the air fryer with olive oil spray. Place the balls in a single layer inside.
- Pre-heat the air fryer to 375 degrees. Cook the Broccoli bites for 16-20 minutes, flipping halfway through.

Ingredients
- 2 cups packed cooked broccoli
- 1 cup panko bread crumbs
- 2 eggs
- 1 cup shredded cheddar cheese
- 1 shallot
- 1 Tablespoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Add all ingredients to the bowl of a food processor. Pulse until mostly smooth.
- Spray the air fryer basket lightly with olive oil cooking spray. Scoop out balls about 1.5-2 Tablespoons in size. Roll gently with your hands and place in the basket of the air fryer. The mixture should make 20-25 balls.
- Preheat the air fryer to 375. Cook for 16-20 minutes, flipping halfway through.
