Ingredients

Poblano Peppers

White onion: you could substitute yellow or sweet onion if you prefer

6 medium tomatoes: 12 roma tomatoes would also work

Garlic: freshly minced or pressed will give you the best flavor

Bay Leaves

Salt & Pepper

Cottage cheese:  I used 1% cottage cheese; however, feel free to use whatever your favorite is

Hot Sauce:  I almost always use this one

Corn tortillas:  either yellow or white will work just fine

Sharp cheddar cheese:  I used yellow, white would work as well if that is your preference

Pepper Jack Cheese

Olive Oil

Chili powder & Extra hot sauce:  Depending on the time of year, the spiciness of poblano peppers can vary greatly.  The sauce for these air fryer chile rellenos is rather mild to accommodate the potential spiciness of the poblano peppers.  If your peppers are mild, or if you prefer a spicier dish, you may wish to consider adding extra heat via chili powder or hot sauce.

How to make Air Fryer Chile Rellenos

Begin by preparing your poblano peppers and onion to roast using the directions below.  Roast them in the air fryer and then set the poblano peppers aside to steam, cool and then be peeled.

Chop the poblano peppers and combine with the freshly shredded cheeses.  Set the onions in the food processor.

Along with the onions, also process the tomatoes and garlic.  Heat a sauce pan with oil and simmer the mixture down to make the enchilada sauce.

Blend the cottage cheese, salt and hot sauce to make the cheese sauce.

Prepare a baking pan and begin layering the chile rellenos enchiladas.  

Air Fry as directed, allow to cool briefly, slice and serve.
