These Air fryer mini quiche bites with ham and Swiss cheese are so easy to put together and make such an elegant little bit for brunch or a special breakfast. You will adore how easy these are to make. Kids also love the bite-sized quality which requires zero utensils! They can be made very easily but still provide a lovely presentation for breakfast or brunch.

Ingredients in Air Fryer Mini Quiche
Mini Phyllo Cups– I used these by Athens. They work perfectly and do not need to be thawed or really prepared. They provide the perfect little flakey cups for this mini quiches with no effort at all.
Deli Ham-really any ham is great here. You can use leftover ham from an Easter or Christmas holiday or buy ham at the deli to chop up. Just dice your favorite and add to the cups!
Eggs-2 eggs is what you will need to make these mini air fryer quiches
Milk- Just use your favorite. I used almond milk to make this recipe as that is my family’s current favorite.
Dijon Mustard
Seasoned Salt– I used this one which is a well-rounded favorite great for making a variety of dishes.
Freshly Ground Black Pepper
Swiss– I prefer the deli-style baby swiss which I shred myself to make these air fryer mini quiche. You could use regular Swiss cheese if you prefer.
Chives-for this recipe you can use either fresh chives, as I did or substitute something like these freeze-dried chives. I have had good luck with this brand.

How to make Air Fryer Mini Quiche
- Prepare a baking sheet or the basket of the air fryer by either spraying with olive oil spray or lining with parchment paper.
- Place the phyllo cups on the prepared baking pan. Depending on the size of your air fryer, you may need to prepare the mini quiches in batches instead of all at once. The cups can be touching borders with one another (as they will not increase in size), but should not be tipped or stacked.
- Divide the ham among the phyllo cups by sprinkling a small amount among each of the cups.
- Whisk together the eggs, milk, Dijon mustard, seasoned salt and pepper. Carefully spoon into each cup evenly dividing among the prepared quiche cups.
- Top each cup with the diced or shredded Swiss cheese.
- Pre-heat the air fryer to 360. Air fry for 12 minutes or until eggs are set and puffed up a bit.
- Top with the chives and serve. The Air Fryer Mini Quiche can be assembled a bit in advance though they have the best flavor when served freshly from the air fryer. The easiest way to prepare in advance would be to combine the ham, eggs, cheese and seasonings and then divide among the cups when you are ready to prepare the mini quiche.

- 30 mini phyllo cups I used 2 packages of Athens phyllo shells
- ⅔ cups deli ham diced
- 2 eggs
- ¼ cup milk
- 1.5 teaspoon Dijon mustard
- ½ teaspoon seasoned salt
- ½ teaspoon ground black pepper
- ½ cup deli baby Swiss cheese diced
- 1 Tablespoon chives diced
Instructions
- Place the phyllo cups on the prepared baking pan.
- Divide the ham among the phyllo cups.
- Whisk together the eggs, milk, Dijon, seasoned salt and pepper. Carefully spoon into each cup.
- Top each cup with the diced Swiss cheese.
