How do I make Air Fryer Stuffed Poblanos?

  • Begin by slicing the peppers in half lengthwise.  Remove all the seeds and any white stems.  You can leave the stems on for serving aesthetic or remove them if you prefer.
  • Next, melt the butter in a skillet.  Add the turkey and cook, stirring and breaking up until it is no longer pink and is beginning to brown.
  • Add the garlic powder and taco seasoning to the pan.  Next add the canned diced tomatoes, undrained and bring to a boil.  Once the mixture boils, reduce the heat to a simmer and continue to cook until the liquid begins to evaporate.
  • Lower the heat and add the laughing cow wedges, it may be easier to chop them up before adding and continue to cook, stirring until the laughing cow has melted and is smooth.  Remove the skillet from the heat.
  • Stuff the filling into the prepared poblanos and place them into the air fryer basket.  Sprinkle the cheddar cheese over the tops of the peppers.
  • Preheat the air fryer.  When it reaches temperature, add the peppers to the air fryer and fry.
