Air Fryer Apple Muffins with Cinnamon Streusel Topping

What are Air Fryer Apple Muffins?

These delightful muffins are a super-easy way to create some almost fully homemade muffins with a delicious homemade streusel topping that will keep the whole family coming back for more.  Plus, the muffins sneak in some fresh apples to boost the nutrition and moisture of the muffins, making them amazingly tasty.

What are the ingredients in Air Fryer Apple Muffins?

These muffins are really easy to make and include several short-cuts to help make things quicker and easier (ALWAYS a plus, if you ask me!).  So here is what you will need:

  • These muffins include two separate parts, the muffins and the streusel topping.
    • For the Muffins you will need:
      • A package of cinnamon muffin mix. 
      • Milk (use your favorite: skim, 2%, whole, etc)
      • 2 red apples, peeled, diced and cored. You can use any apple of your choosing it will just affect the flavor a bit, for example, Granny Smith will add a bit of tartness to the muffins while Honeycrisp will add a touch of sweetness.
    • For the Streusel topping you will need:
      • Graham cracker sheets
        • I used honey graham; however, I think cinnamon flavored graham crackers would also pair particularly well with this recipe.
        • Chocolate may be an option, but would be an entirely new dish so I can’t really say how it would turn out with the additional ingredients.
      • Cinnamon sugar
      • Brown Sugar
      • Butter (I used olive oil based butter, but use your favorite butter)

How to make Cinnamon Streusel Muffins:

The true beauty of these muffins is just how easy they are.  They are the perfect blend of “they are just a mix” and “from scratch” to keep it real.  It allows you to upgrade a super-easy mix recipe with just enough to make it seem almost homemade.  Here is how you can make these muffins:

  • Heat the oven and prepare the muffin pan.
  • Mix together the prepared muffin mix, the fresh diced apples and the milk and stir well.  Divide the mixture evenly among the prepared muffin pan.
  • Next prepare the streusel by first melting the butter.  Stir in the cinnamon sugar and brown sugar until smooth and finally fold in the graham crackers.  Stir well to fully coat the graham cracker crumbs.
  • Spoon the streusel mixture over the tops of the muffins.
  • Bake until cooked through and the tops are beginning to brown.  
  • Allow to cool before removing from the muffin pan.

What to serve with Air Fryer Apple Muffins:

For starters, these make a nice light breakfast on their own.  My kids also enjoy taking them as a snack for school.  To make it more of a meal or serve with brunch, here are some other things that might pair well with the muffins:

  • Jalapeno Popper Spanish Tortilla is a light blend of eggs, potatoes and cheese blended together with the flavors of a beloved jalapeno popper.
  • Eggs: scrambled, over easy, however you like them, eggs would add some protein and round out a nice light breakfast or try this Western Omelet, also made in the air fryer to round out a brunch.
  • Potato Hashbrowns are another classic option that would go very well with the muffins
  • Fruit salad:  Keep it nice and fresh by serving some fruit along with the cinnamon streusel muffins.

Storing the Muffins:

These cinnamon streusel muffins will keep well for 2-4 days when stored in an air tight container. The muffins can be stored on the countertop or in the refrigerator. Alternatively, the muffins can be frozen and stored for up to three months in a freezer. Microwave briefly to thaw and serve.

Ingredients
  

For the Muffins:

  • 14 oz package cinnamon muffin mix
  • 1 cup milk
  • 2 red delicious apples peeled, cored and diced

For the Streusel:

  • 6 sheets graham crackers crumbled
  • 3 teaspoons cinnamon sugar
  • 2 Tablespoons brown sugar
  • 3 Tablespoons butter

Instructions
 

  • Heat the air fryer to 375 degrees. Grease a muffin pan and set aside.
  • Combine the muffin mix, apples and milk and stir well. Divide among the cups of the prepared muffin pan.
  • In a small bowl, prepare the streusel. Melt the butter. Stir in the cinnamon sugar and brown sugar until smooth. Fold in the graham cracker crumbs until well coated.
  • Spoon the streusel mixture over the tops of the muffins.
  • Bake for 12-15 minutes until browned and cooked through.

Notes

Allow to cool before removing from the muffin pan.
