Instant Pot Drunken Noodles

What are Instant Pot Drunken Noodles?

Traditional Drunken Noodles are a Thai dish.  Our version takes that concept, but utilizes a more Italian blend of flavors.  These Drunken Noodles are a delightful, lightly sauced pasta dish with sausage, tomatoes, bell peppers, white wine and seasonings.  This dish cooks very fast with the help of the instant pot and its multi-function features.

What are the Ingredients in Instant Pot Drunken Noodles?

While this dish has a very fresh flavor, many of the ingredients are shelf stable and  things you may already have available in your pantry.  Others are simple, and easy to find so you should have no issues making these noodles whenever the craving strikes.  Here is what you will need

  • 12oz Italian-style sausage. 
    • I used Morningstar Italian Sausage Crumbles to keep the dish vegetarian, but you could easily substitute your favorite turkey, pork or chicken Italian-style sausage.  Simply make sure to crumble as you cook to obtain a similar final dish.
  • Kosher salt
  • Italian Seasoning
  • Freshly cracked black pepper
  • Garlic powder
  • Bell peppers
    • I used one pepper each of orange, yellow and red, but any combination of those or even a green pepper would work well
  • Dry white wine
    • Chardonnay or even cooking wine will work fine
  • Canned diced tomatoes
  • Chicken or vegetable broth
    • Either will work just fine, choose your favorite
  • Wide egg noodles
    • For best results stick with wide or extra wide egg noodles for this recipe.  The more narrow versions may become overly mushy in this recipe.
  • Parsley
    • If you don’t have any, or prefer not to buy any for such a small amount, you can substitute dried
  • Fresh basil
    • I really feel this adds a lot of freshness and great flavor to the dish so I would not recommend substituting dried for the basil.  
  • Freshly grated parmesan cheese

How do you make Instant Pot Drunken Noodles

These noodles are a favorite of mine as they are so quick and easy to prepare.  Here is what you will need to do:

  • Begin by setting the Instant Pot to saute.  Add the morningstar crumbles and cook, stirring until thawed and beginning to brown.
    • Note: if you are using a different sausage (turkey, pork, chicken, etc), add at this same point and cook, crumbling, until fully browned.
  • Add the seasonings and the peppers and cook briefly until beginning to soften, 3-4 minutes.
  • Turn off the saute function.
  • Add the white wine, the diced tomatoes, broth, and the egg noodles.  Set to manual high pressure for 1 minute.  When the cooking time is done, quick release any remaining pressure.
  • Serve topped with the parsley, basil and parmesan cheese.

Can I store leftover Instant Pot Drunken Noodles?

YES!  These noodles do keep well.  Leftovers will soften a bit from the original version but I find them still quite pleasant and my kids love the leftovers.  Store any extra noodles in an air-tight container in the refrigerator for 2-3 days.  They are great to reheat for lunches or a simple leftovers dinner, or even to serve cold for a bit of variety.

What goes well with Instant Pot Drunken Noodles?

You could easily have the noodles on their own, or even pair them with a simple salad.  If you wanted to do a bit more to make it a meal.  Here are some of my favorite pairings:

Instant Pot Drunken Noodles

  • 12 oz bag morningstar Italian sausage crumbles
  • 2 teaspoons salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon freshly cracked black pepper
  • 1.5 teaspoons garlic powder
  • 3 bell peppers diced (orange, yellow or red will work)
  • ½ cup dry white wine
  • 28 oz can diced tomatoes do not drain
  • ½ cup chicken or vegetable broth
  • 12 oz wide egg noodles
  • 2 Tablespoons parsley
  • ¼ cup basil chiffonade
  • Freshly grated parmesan cheese to top


  • Set the Instant Pot to Saute. Add the morningstar Italian sausage crumbles until thawed and starting to brown.
  • Add the seasonings and peppers and continue to stir for 3-4 minutes to begin to soften the peppers.
  • Turn off the saute function.
  • Add the white wine, the diced tomatoes, broth, and the egg noodles. Set to manual high pressure for 1 minute. When the cooking time is done, quick release any remaining pressure.
  • Serve topped with the parsley, basil and parmesan as desired.


If you would prefer to substitute chicken, pork or turkey Italian-style sausage for the Monrningstar crumbles, add at the same time as the crumbles and cook, crumbling until fully browned.
