This Red Curry Pasta Combines a lightly spicy sauce with a veggie-packed pasta dish for a quick and easy weeknight-friendly meal.

  • Olive oil
  • Sweet Potatoes
  • Salt & pepper
  • Garlic Powder
  • Fresh Ginger
  • Red Curry Paste
  • Cauliflower

  • Coconut milk:  this is the kind that comes in a can, not the one sold in the milk cabinet.
  • Vegetable Broth:  If you prefer you can substitute chicken broth.
  • Spaghetti noodles
  • Lime wedges to serve, optional

How to make Red Curry Pasta

  1. Peel and cube the sweet potatoes.  Toss them with olive oil and roast them.  If you are in a hurry, you could use frozen sweet potato cubes to make the dish come together faster.
  2. Heat remaining oil in a large pan. Add the ginger and garlic powder and cook.. Add the curry paste, cauliflower, bell pepper and peas and stir to coat. Cook for about 5 minutes until veggies are beginning to soften.

  • 1 Tablespoon olive oil divided
  • 4 small sweet potatoes peeled and cubed
  • Salt & pepper
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon ginger peeled and minced
  • 3-4 Tablespoons red curry paste
  • 1 cup cauliflower florets
  • 1 orange bell pepper in thin strips
  • 3/4 cup frozen peas
  • 1 can light coconut milk
  • 1/2 cup vegetable broth
  • 8 ounces spaghetti cooked to package directions
  • Lime wedges or sriracha to serve optional

Instructions
 

  • Heat oven to 400. Put sweet potato cubes on a baking sheet. Toss with 1/2T olive oil and salt and pepper to taste. Roast for 25-30 minutes, tossing once.
  • Heat remaining oil in a large pan. Add the ginger and garlic powder and cook for 30 seconds. Add the curry paste, cauliflower, bell pepper and peas and stir to coat. Cook for about 5 minutes until veggies are beginning to soften.
  • Add the broth a coconut milk and bring to a boil Lover heat, cover, and simmer 5-7 minutes until sauce begins to thicken.
  • Stir in the noodles and sweet potato cubes. Ladle into bowls and serve immediately, topped with fresh lime juice or sriracha.
