Veggie Ranch Pizza

This Veggie Ranch Pizza is a veggie lover’s dream.  Homemade tomato infused pizza crust is topped with a cool and creamy sauce and heaped with fresh veggies.  It is the perfect pizza for warmer days!

What are the Ingredients for Veggie Ranch Pizza?

Begin with one batch of our Air Fryer Focaccia dough.  For the dough you will need:

  • Rapid rise yeast
  • Brown sugar, either light or dark will work
  • All purpose flour
  • Sun Dried tomatoes, you want to use the ones packed in oil, not the dried ones
  • Kosher salt
  • Olive oil

To top this Veggie Lover’s Pizza you will need:

  • Plain whipped cream cheese-make sure it is the fluffy whipped kind, not the kind that comes in a block
  • Sour cream
  • Dry ranch dressing mix–if you prefer, you could used dried spicy ranch dressing mex
  • Diced cauliflower
  • Diced broccoli
  • Diced red bell pepper -you could substitute yellow or orange if you prefer
  • Peas-frozen peas that have been thawed and drained will work perfectly
  • A shallot
  • Hot sauce, optional

How to make the air fryer Focaccia dough:

  1. Add the yeast, brown sugar and water to a large bowl.  Lightly mix to dissolve and set aside until the yeast becomes foamy.  5-10 minutes.
  2. Add the remaining dough ingredients and knead until a smooth dough forms.  Place in a large bowl and seal with a lid or plastic wrap.  Allow to rise until doubled in size.  30-45 minutes.
  3. Divide the dough in half and spread each ball out on a sheet of parchment paper in a large oval, approximately ¼” thick.  Cover lightly and allow to rest for 20-30 minutes before cooking.
  4. Use your fingers to make divots in the dough.  Drizzle with the olive oil.  
  5. Preheat the air fryer to 360. Cook for 5 minutes, remove from the air fryer to add the toppings.

Top the Pizza

  • Allow the dough to fully cool before adding any of the toppings.
  • While the cooked dough is cooling, make the sauce by combining the whipped cream cheese, sour cream, dry ranch dressing mix and hot sauce, if using in a bowl.  
  • When the crust is cool, spread the sauce evenly atop both of the pizza crusts.
  • Divide the veggies evenly among the two crusts.  
  • Serve immediately or chill for later.

What other veggies could I add to this pizza?

One of the best parts of this veggie ranch pizza is how easy it is to customize.  If you don’t have, or don’t care for any of the veggies the recipe calls for, you can easily omit it.  If you would like to substitute some of the veggies or add additional ones then here are a few suggestions for ones that might go well:

  • Shredded carrots
  • Mushrooms- either button or baby bella, thinly sliced
  • Corn – much like the peas, frozen, thawed corn will work perfectly for this dish
  • Fresh baby spinach-torn or thinly sliced
  • Diced tomatoes
  • Green bell peppers, diced
  • Scallions, finely chopped

Can I make this Veggie Lover’s Pizza in advance?

Absolutely!  In fact, this veggie ranch pizza, is even better if you do make it ahead of time as it gives the dough time to chill.  For best results, place the pizza squares in an airtight container and store in the refrigerator for up to 3 days.

Ingredients
  

1 batch Air Fryer Focaccia:

  • 1 packet rapid rise yeast 2 ¼ teaspoons
  • 1 Tablespoon brown sugar
  • 1 ¼ cups water
  • 3 ½ cup all purpose flour
  • cup sundried tomatoes packed in oil
  • ¼ cup oil from sundried tomatoes
  • 1 teaspoon salt
  • Approximately ½ Tablespoon oil to spread on top

For the topping:

  • 1 cup whipped cream cheese
  • 1 cup sour cream
  • 1 packet dry ranch seasoning
  • Several dashes of hot sauce optional
  • 2 cups cauliflower diced
  • 2 cups broccoli diced
  • 1 cup red bell pepper diced
  • 1 cups peas
  • 1 shallot diced
